Poboys
The hibachi poboy is where Yami Hibachi And Poboy got its name, and it is the dish that sets us apart from every other restaurant on Airline Drive. Take the smoky, high-heat flavors of Japanese hibachi cooking and put them on a traditional Louisiana French bread poboy. It sounds simple, but nobody else was doing it before Yami, and once you try it, you understand why the combination works so well. The char from the flat-top grill meets the light, crispy crunch of fresh French bread, and the result is something that belongs in both worlds.
The Fusion That Works
A traditional poboy is built on the bread: crusty on the outside, soft and airy on the inside, baked fresh and delivered daily the way it has been done in Louisiana for over a century. What Yami does differently is what goes on that bread. Instead of the usual fried shrimp or roast beef, we grill your protein hibachi-style on the flat-top: seasoned, seared at high heat, and finished with the same technique we use for our hibachi plates. The smoky char and savory seasoning from the grill create a flavor profile that you simply do not get from a standard poboy filling. It is Japanese technique on Louisiana bread, and every bite has both.
Choose Your Protein
We offer four proteins on the hibachi poboy: chicken, flank steak, shrimp, and crawfish. The chicken is sliced thin and grilled fast so it stays juicy with a caramelized edge. The flank steak gets a hard sear that locks in flavor and gives each piece a satisfying chew. The shrimp are grilled whole with butter and seasoning until they curl and char slightly. And the crawfish is the most Louisiana option on the menu, grilled with Cajun seasoning and piled high on the bread. Each version tastes distinctly different, but they all share that signature hibachi smokiness that makes these poboys unique. Not Your Average Poboy
Metairie has no shortage of poboy shops, and Louisiana has a deep tradition of sandwich making that goes back generations. We respect that tradition: the bread, the generous portions, the straightforward approach to building a sandwich. But Yami brings something new to the table by combining two strong culinary identities into one sandwich. The hibachi grill gives the protein a depth of flavor that frying cannot replicate, and the French bread gives it a texture and portability that a plate cannot match. It is a poboy for people who love poboys and a hibachi dish for people who love hibachi. Order one for pickup and taste the difference for yourself.
